Where’s My Guac?!

Now, about our approach to guacamole thus far…

I remember reading a negative food review of a restaurant. The food reviewer was disgusted that a professed “Mexican” restaurant didn’t have any avocados even though it was only the beginning of the evening and there was guacamole on the menu. The reviewer sighed, “couldn’t they just run out to the store and buy a few in time for opening?”

The challenge with avocados is that they are tricky! If you buy them from a food distributor ripened, they have generally been ripened in the fridge. This leads to a mushy, brown and tasteless avocado.

In order to get that beautiful creamy, green, fresh tasting avocado, you simply need to ripen them at room temperature and use them at just the peak time.

That means that the poor restauranteur in the review simply couldn’t run out and get a few from the store. The store avocados would have either been brown and mushy, or hard and under ripe. It takes time and management to properly handle avocados.

The only way to keep guacamole on the menu constantly right now would be to buy a dried premix or a pre-packaged product filled with additives and preservatives. Of course, by now you will know that that would be totally against our ideals.

We’d rather deny you the guacamole experience until we can do guacamole to our standards than compromise Hernande’z’ very reason for existing!

We’re not being churlish! We just are unable to handle this offering right now! Rest assured, if you ever see it on the feature menu, it means that it will be really fresh and properly prepared.
